I think two or three are quite normal.
I have four, not counting the minstrel ones

Just two for me. Plus a few have passed through “Lardo Zeddy Sales LTD”.

In mitigation I have to say that one has trick firmware for musical use, another is a one of five collectors item, the third is a white ZXpand issue six created for audio and MIDI playback of which at the moment there are only three in the wild.
Two more are tied to a mixing desk in my home studio as I use the zeddy and AY as an actual instrument for recording parts rather than just primitive chip tune. The last two comprise of one exclusivly for FORTH and the other for my cipher/encryption work. (I use the zeddy as a computer not a games console ) I also use this one for converting games to UDG for others to use even though I'm not a gamer myself.
So mostly all in daily use( the audio one seven days a week listening to albums as I work on other things in my computer room) ) plus also given the difficulty in getting new spands that are suitable for my purposes ( the new ones made overseas are based on the 5.3 and are minus the B-port solder pads and are fitted with a j\stick outlets not the ones I need for MIDI) the ones I have should see my time out.
V late edit.
Just realised I have one for my ZX80 so eight in total.
