Not sure what has happened, but as of today, my ZX81's screen has gone weird. The K prompt is hardly visible, like it's washed out. It is there, but appears as if someone has messed with the brightness/contrast. I've removed the attached ZXpand and AY expansion, but still the same problem. I'm wondering if it is the lead itself from the TV out to my PVM? Could a damaged lead cause such an issue? If so, I'll try and get hold of one and give that a try.
Any advice, most appreciated.

It was unlikely that devices connected to the edge-connector/expansion port would cause this.
From what you said, I’m assuming your ZX81 has been composite video modified? If yes, could you please let us know which variation has been done.
If your ZX81 is still using the RF/UHF TV output, then a poor connection or faulty lead may be the cause. Although normally the symptoms are an unstable picture as the TV has difficulties locking on to the sync signals. Other possibilities are the tuning has drifted or the frequency used by the modulator has drifted.
