Right, that's me finished. 21 versions in total, all included in the zip file in the first post in this thread, and now all with their own box art.

Zip also now includes all the necessary COL and CHR files to recreate/fiddle with these mods, and the final iteration (V4) of my "definitive" version, the Red Edition, with skinny girders, nicer-looking Jumpman and pickups, and various tweaks. This is as nice and as authentic as I can make ZX81 Kong look. Chroma really is a powerful bit of kit once you figure out its quirks - kudos once more to Paul Farrow both for it and his wonderful Kong that have now kept me happily distracted for about a fortnight while the UK crashes to the ground in flames.
