The new trimmer pots arrived the other day.
The footprint was perfect but they were a bit wide and bumped into the nearest TC. Oh well.
After much hair pulling getting it re-tuned and a couple of days checking, it seems to work decently enough now.
So it does seem as if the VR pots were knackered and were probably the cause of the problems all along.
I think issue 2s are above my skill set.
But thanks everyone for the tips and listening.

Re: Issue 2 with terrible colour
I've let this guy sit for about a week or so and I pulled it out this morning to give a look.
It's had a habit or changing its behaviour every time I powered it up.
With the new trim pots installed, it was pretty good this morning.
It wasn't perfect though, every few seconds it would switch between perfect and a slight yellow tint.
I'm hoping that it's "just how an issue 2 work" and that'll go away after it warms up a bit or I've not exactly tuned it just right.
But I'm still pretty happy that this has more or less worked out.
